We are moving! Of course, this means that my life is full of boxes, piles of stuff to sort through and utter chaos. But the good kind of chaos. =)
Because of this move (10 days until closing!!!) I haven't had as much time to bake or blog about it. On the upside, once I get settled in I'll have a huge (comparatively speaking anyway) kitchen to work in! And you get the joy of seeing pictures of my new home.
Until then here is a recipe to hold you over. The best coconut cake you'll ever have, as promised. And it's super easy!!! Uses a cake mix as a base (shh...don't tell!) The frosting is the best part; believe me when I say you'll have to fight over licking privileges!!!
Cocount Cake
1 box white cake mix
2/3 cup shredded coconut
Make the cake mix according to directions, adding the shredded coconut to the batter at the last minute of mixing. Pour into greased pans and bake as directed. Cool completely
Coconut Frosting
1 stick Willow Run soy margarine (or butter if you aren't worried about dairy free!)
1 tsp coconut extract
dash of salt
4 cups powdered sugar
1 cup shredded coconut
1/4 cup vanilla soy milk or half and half
In a large mixing bowl, beat the margarine, extract and salt until fluffy. Add the powdered sugar, one cup at a time until fully mixed adding the milk as needed to keep the frosting smooth. You may not need the whole 1/4 cup. Slowly beat in the coconut. The frosting should be stiff but easy to spread. Frost cake! Lick beaters. Lick bowl. Smile. =)
Serve to a coconut cake fanatic to make their day.
Now that I've posted this, I have a stack of boxes that need filling and kids that need a nap. I really need to get away from this recipe too...eating this cake is completely addicting. Reading it makes me want to eat it. And the 3 pounds I lost over Spring Break want to stay off. NO CAKE FOR ME! But you may enjoy it for me. Please. And let me know what you think.
